We've tried cheese block cutters, wire roller cutters... Etc. This knife gets the job done. Best cheese cutter yet! The blade allows you to achieve super thin slices. Also, if you slip, the blade is designed in such a way that it hurts, but doesn't break the skin much.Lightweight.Great knife! HIGHLY recommend.The knives are easy to hold and work with. Off to Amazon and after looking at the good selection and trying to decide amongst them I chose this one. It makes all the difference in the world when I work with slicing different cheeses. Such a great buy, thanks Amazon!In addition to its usual job of cutting cheese, I use this knife for cutting butter into 1 inch thick pieces for making shortbread cookies in my food processor.The cutting edge is slightly serrated, which I didn’t notice in the description, so the cut is rather crumbly rather than a clean cut. The two points at the tip may prove useful for serving or picking up the cut cheese. Given the sharp double points it’s particularly useful that it comes with a knife shield.The knife is so thin I cannot make a straight cut. It will slide to the slide for an uneven cut on even a medium hard cheddar. I am fairly strong but no matter how I hold or slice I can't get a uniform slice. Based on the glowing reviews, I bought this as a replacement for another brand that broke after 10 years of use. I can't use this for much so I will have to find another knife.The handle on this knife is a good size and quite grippable; however, the blade is thin and flexible - doesn't really have the stiffness/heft to get through even middle hardness cheeses. Also, the serrations are very small and saw-like - does not really cut well.Excellent bread knife for the money and comes with a protective sheath.slices evenly
